History Of Our Hotel

When the present owners, Bill and Pat White visited Limoux in 2002 they intended to spend two weeks in the area, but within days Bill was busy scouting around for a place of his own. His vision quickly became an intimate and premier bed and breakfast in Limoux, France.

Within weeks, the Whites took ownership of Montfaucon and entered into contract with a local architect and thus their adventure began.

The building had been remodeled many times and it was split into five small apartments and an art studio. It wasn’t long before Pat and Bill were convinced they should try to restore at least some of the original medieval characteristics.

Montfaucon has its chain of title running back to 1324, and parts of the building may have been in use 100 to 150 years earlier. It was built in the oldest part of the city directly on the river Aude, into the original city wall; its riverfront wall is more that three meters thick at the base. It is believed that the top floor was destroyed by a fire in the 1500s. Consequently, the upper floors were reconstructed in stone.

The building sits on a large arched cave with a magnificent stone stairway down to the studio, wine cellar and meeting room. The kitchen contains a stone bread oven and a well 12-meters deep. A grand terrasse overlooks the Aude River, providing expansive views of the millennium-old St Martin’s church, used by St. Dominic in 1209.
