All breakfasts and dinners are included in the package price. Healthful breakfasts energize your day's activities with copious amounts of cereals, fresh fruit and juice, fresh local breads and croissants, jams and confitures, yogurt, café au lait, and English or herbal tea to energize your day's activities. Some dinners are served in our 14th century dining room or on the terrace overlooking the Aude. Other dinners are arranged at outstanding local restaurants. We provide you with a broad variety of the region's cuisine, featuring fresh local produce, seafood and meats, served up with the camaraderie of charming, friendly chefs and their families. Culinary Specialities The culinary specialties of the region include a variety of duck dishes, including confit and magret de canard, foie gras, and cassoulet (a dish, famous in Limoux, of beans slowly baked in earthenware with duck, pork and a variety of spices), roast lamb, a wide variety of fresh ocean fish from the nearby Mediterranean, ratatouille of fresh regional vegetables, mouth-watering salads, and innumerable local goat, sheep and cow cheeses. All garden ingredients come from small, local, organic farms. On request, all restaurants will prepare special dinners for vegetarians and guests with food allergies. All dinners include selected local wines, and as much as you wish to drink with your meal. In your tasting of the local wines, you will be introduced to the balanced finesse of the red and white wines of the Minervois; the gutsy, full-bodied reds of the Corbières; or the new Cabernets and Merlots of the Malpère. Always, you are exposed to the famous sparking wines of Limoux—Blanquette and Crémant de Limoux, invented 70 years before Dom Perignon brought its secrets to the Champagne district. |
